Back to School Meal Prep — 5 Dinners Prepped in 2 Hours on Sunday

What this produces: 5 complete family dinners for 5 people. Sunday investment: 2 hours. Weeknight investment: 10–20 minutes of reheating and assembly. The September that changed how I experience the school term.

Why September Needs a System

The first week of September is simultaneously the most exciting and most exhausting week of the year. New school years, new routines, new logistics — and dinner still needs to appear on the table by 6:30 PM every evening regardless of what else has happened.

Before I started meal prepping, I cooked from scratch most evenings. It took 35–45 minutes and I was making decisions about food at the most decision-fatigued point of the day. After September 2024, I meal prepped every Sunday. By week three it was the most reliable habit I’ve maintained all year.

This is the exact routine I use.

What You Need

Appliances: Air fryer (5-quart+), Instant Pot or large pot, food processor (optional but helpful)
Storage: 8–10 airtight containers (medium and large), 2–3 freezer bags
Time: 2 hours Sunday afternoon
Prep: A shopping list done Saturday, everything in the fridge by Sunday morning

The 5-Dinner Menu (September Week One)

I rotate menus throughout the term but this is the September opener — tested, consistent, eaten by all four children with minimal negotiation.

The 2-Hour Timeline

12:00 — Start slow cooker chilli

This is the first thing because it needs time. Add to slow cooker: 500g beef mince (browned in a pan for 5 minutes first), two tins chopped tomatoes, one tin kidney beans, 2 tsp cumin, 1 tsp chilli flakes, 1 tsp smoked paprika, salt. Set to Low. Leave for 6–8 hours. By dinner on Thursday it’s deeply flavoured.

Active time: 10 minutes.

12:10 — Make the bolognese in the Instant Pot

Sauté function: soften one onion and four garlic cloves in olive oil, 5 minutes. Add 600g beef mince, brown 5 minutes. Add two tins tomatoes, 1 tsp dried oregano, splash of red wine if available, salt and pepper. Seal lid, Pressure Cook for 20 minutes. Natural release 10 minutes. Meanwhile, continue with step 3.

Active time: 15 minutes prep + 30 minutes hands-off.

12:25 — Air fry chicken thighs (two batches)

Season 8 bone-in chicken thighs with garlic powder, smoked paprika, salt, pepper. Air fry at 200°C for 22 minutes skin-side up. While first batch cooks, prep vegetables.

Batch 1 (4 thighs): 12:25–12:47
Batch 2 (4 thighs): 12:50–13:12

Active time: 10 minutes across both batches.

12:30 — Roast vegetables (while chicken runs)

Chop 2 courgettes, 2 peppers, 1 head of broccoli, 200g cherry tomatoes. Toss in olive oil, salt. Air fry batch 1 (broccoli + tomatoes) at 200°C for 12 minutes. Batch 2 (courgette + peppers) for 10 minutes. Stagger with chicken batches — the air fryer runs almost continuously.

Active time: 15 minutes chopping + 2 minutes per batch management.

13:00 — Cook rice in Instant Pot

While bolognese is on natural release, rinse 600g white rice. Add to Instant Pot inner pot with 750ml water. Pressure Cook 3 minutes, natural release 10 minutes. This is Monday’s and possibly Tuesday’s rice if there’s enough.

Active time: 5 minutes.

13:20 — Package everything

Bolognese portion release from Instant Pot (should be ready now). Chicken thighs finished. Vegetables roasted. Rice cooked.

Container setup:
– 4–5 containers: 2 chicken thighs + scoop of vegetables + portion of rice (Mon dinner — family of 5 needs 5 but children often share)
– 2 large containers: bolognese sauce (Tuesday dinner — pasta boiled fresh on the night, takes 10 minutes)
– Slow cooker chilli: stays in slow cooker until Thursday, then portioned

Label each container with day and contents. Stack in fridge.

Active time: 15 minutes.

13:35 — Prep Wednesday’s fish taco components

Prep now: breadcrumb coat the fish strips (250g white fish cut into strips → dip in egg → dip in panko + salt + garlic powder). Store coated strips on a plate covered in cling film in the fridge.

Wednesday night task: air fry at 190°C for 12 minutes. Set out taco toppings. Done in 20 minutes.

Active time: 10 minutes.

13:45 — Clean up

Wash Instant Pot inner pot, air fryer basket, bowls. The food processor gets cleaned if used for onions. Total cleanup time: 15 minutes.

Total Sunday time: 2 hours including cleanup.

The Weeknight Routine

Monday (5 minutes): Remove containers from fridge. Reheat chicken + veg in air fryer at 180°C for 5 minutes. Reheat rice in microwave 2 minutes. Dinner ready before they’ve finished unloading their school bags.

Tuesday (12 minutes): Boil pasta (10 min). Reheat bolognese in small pan with a splash of water (5 min, parallel). Combine. Parmesan on table. Done.

Wednesday (20 minutes): Air fry pre-coated fish strips (12 min). Warm tortillas (2 min air fryer). Set out toppings in bowls. Assembly line dinner. Everyone makes their own.

Thursday (45 minutes, but mostly hands-off): Load jacket potatoes in air fryer at 200°C for 40 minutes (rotate at halfway). Reheat chilli from slow cooker (5 min microwave). Grate cheese. Dinner at 7PM — slightly later but worth it.

Friday: Order pizza. You’ve earned it.

What Changes in Week Two

Same structure, different proteins and sauces. After a few weeks the formula is automatic:

Sunday foundation: One batch-cooked protein (air fryer), one sauce (Instant Pot), one grain (Instant Pot rice or hob pasta), one vegetable (air fryer).

From those four elements, Monday through Thursday is assembly rather than cooking. The investment is Sunday afternoon; the return is five calm weeknight evenings.
